It is my pleasure to recommend Tim Lenahan to anyone with a serious
interest in starting-up or improving a brewpub or microbrewery business.
I had the good fortune to work with Tim in expanding the Tommyknocker
Brewery in Colorado, to a new location in Phoenix, AZ. Tim was instrumental
from the earliest steps of business planning and raising capital through
every critical phase of design, engineering, and construction. The completed
Phoenix facility had a 50 bbl, 4-vessel brewhouse with a 30,000 bbl
capacity coupled to a matched packaging operation. This beautiful brewery
was masterfully integrated with a 150-seat restaurant.
From concept to production, I worked alongside Tim, admiring his drive
to achieve quality and efficiency. From the financial aspects of start-up
and operation to the oversight of brewery production, Tim’s hard
work and attention to detail set the standard for all those involved
in the project. In writing this testimonial letter, I could fill pages
detailing specific evidence (and in fact started to do that) that I
witnessed of Tim’s depth of experience in the brewery and brewpub/microbrewery
businesses. However, rather than ramble on, let me state that Tim’s
passion for brewing, business knowledge and work ethic would make him
invaluable to any person or group seeking to become involved in or improve
a brewpub/brewery business. It was a true pleasure and learning experience

I’ve
been workig with Tim Lenahan over the last couple of years and his input
and insight has not only been helpful, but in many ways invaluable.
I have sought his advice on issues ranging from simple questions of
process to having him fly out and conduct a full on efficiency study
of our brewhouse. From this study I had Tim source both a four-roll
mill and a whirlpool. The cost savings from the implementation of this
equipment has easily paid for his efforts many times over. As a small
but growing craft brewery, it’s difficult to justify hiring a
full time brewery engineer, and even harder to find someone with Tim’s
broad knowledge and unique background. I highly recommend his services.

This letter is to convey my highest regard and confidence in Tim Lenahan’s
abilities as a brewery/brewpub consultant. Tim and I met in 1994 while
I was working for Marriott Corporation. After knowing Tim for more than
a year I asked him to assist me with opening my own brewpub. Tim was
instrumental in helping me throughout the startup process. Beginning
with his help in adding validity to our pro-forma numbers, to bidding
equipment, design and layout, formulating recipes and more; Tim was
essential to our success. Our brewery has gone on to win four Great
American Beer Festival medals including two gold medals. Tim helped
lay the foundation for that success. Even to this day, eleven years
later, I rely on Tim to be a knowledgeable soundboard on crucial operating

Alandale Brewing Company has, during the course of the last two years,
engaged Mr. Timothy Lenahan as a brewery consultant. In that capacity,
Mr. Lenahan has been a trusted resource in the planning, design, construction
and turn-up of our brewing facilities. Following are some of Tim’s
significant accomplishments on our behalf:
• Design
and layout of the brewery.
• Specification of brewing equipment, soliciting bids from equipment
manufacturers, selection and ordering of new brewery equipment. (Mash
Tun, Hot Liquor Tank, Fermenters, Serving Tanks, Grist Hopper, CIP Unit)
• Inspection and evaluation of used brewing equipment and oversight
of equipment disassembly and transport to Alandale’s. (Brewhouse,
Fermenters, Serving Tanks, Glycol Chiller, Heat Exchanger, Steam Boiler,
Mill)
• Formulation of original Alandale beer recipes.
• Initial brewery turn-up; including actual brewing of first runs
of several beer recipes.
• Development of brewing procedures and training.

Hi Tim,
I'm sorry for the delay in the info. We'd been very busy here
that I do filtration and transfers almost every day.
I have reset the roller clearance settings due to run-off problems
particularly with our heavy beers ( 1800 - 2000 kgs grist ) which
used the bigger kernel English Crisp malts ( we are no longer
using this malt ):
original reset
1st Rollers 0.045 0.050
2nd Rollers 0.025 0.035
With the new resetting of roller clearance, we are able to get
grist sieve analysis average values as follows:
50 % retained on #14
35 retained on #30
15 fines
We have reduced up to 50 kgs grist/brew particularly on beers
having grist weights of 1100 - 1600 kgs/ brew and got an
increase of 3% average on our BH efficiencies. One important
observation though ( which is very important to us) is the
noticeable improvement in our beer flavor particularly the
lighter beers ( smoother and maltier, less harsh ).
The diameter of our lauter tun is 9 feet.
